Cherry & Honey Mascarpone Tart

Ingredients
Crust
1 ½ cups graham cracker crumbs
¼ cup melted butter
2 tbsp honey
Pinch of salt
Mascarpone Filling
1 cup mascarpone cheese, softened
½ cup whipping cream
¼ cup honey (cherry honey if available)
1 tsp vanilla extract
Cherry Topping
1 ½ cups fresh or frozen cherries, pitted
2 tbsp honey
1 tsp lemon juice
½ tsp cornstarch (optional)
Directions
Prepare the Crust
Mix graham cracker crumbs, melted butter, honey, and salt. Press firmly into a tart pan and chill for 30 minutes.
Make the Cherry Topping
Simmer cherries, honey, and lemon juice over medium heat for 5–8 minutes until softened. Stir in cornstarch if using and let cool.
Whip the Filling
Whip mascarpone, whipping cream, honey, and vanilla until smooth and fluffy.
Assemble
Spread mascarpone filling into the chilled crust. Spoon the cooled cherry topping over top.
Chill & Serve
Refrigerate for 1–2 hours before serving. Finish with a drizzle of honey or fresh cherries if desired.
